And the taste of our cuisine embodies the ancient act of our women, a new breath for an old dish that has become
contemporary.

Etna, the semplicity of its raw ingredients.

As a small jewel inside a treasure chest, the restaurant “Dodici Fontane” could not have been found in a different
place outside of Villa Neri. Nestled at the bottom of the volcano and immersed in a fantastic surrounding landscape,
from that territory our restaurant brings to the tables products and recipes that look at a style that goes beyond the
island. Our chef Elia Russo becomes the interpreter of scents and aromas typically Sicilian through techniques of
preparation and cooking in step with the times. His dishes travel through the history of the island thanks to
combinations that are current and sometimes surprising.

Dear Guests,

 I thought up my tasting journey with the precise aim of "entertaining the palate", giving a sensation of pleasure and amazement with different and contrasting flavours.

In addition to combining the technique, and respecting the food by simply enhancing the authentic flavors of each ingredient, I love to look for surprising combinations; secret and local ingredients from organic farming give tantalizing aromas to my dishes, elaborated with technique, selection and knowledge of raw materials.

Through my cuisine, I want to introduce myself to you and win you with the best products and ingredients of our land, so genuine that smells of Sicily.

The Memories menu, with our most iconic dishes as protagonists, tells of our growth path, showing the soul and essence of the territory.

The Sea and Land menus, between classics and innovation, with direct flavours and marine sapidities, aim at pleasure.

My Greatest satisfaction will be to guide you on this sensory journey, through my creations full of taste, imagination but above all of heart and love for cooking.
